Who remembers those delicious apricot and coconut chunks we used to get when we were kids???
Well here is my super easy, clean version!
I love these as a grab and go light snack on the run.
Ingredients; 1 cup desiccated coconut 1 cup almond meal 1/2 cup of apricots 1 whole lemon juice / some zest too
Note: You can play around with amounts to get desired taste!
