Did you know that regular banana bread contains approx 11 grams of sugar per serve??? ekkkk! thats a lot, especially if you are anything like me and want to enjoy more than 1 serve!
So after playing around with a few different flours I came up with this gluten free and sugar free banana bread! It only has sugar coming naturally from the bananas.
**Use ripe bananas preferably
squeeze of lime juice (1/2)
8 frozen organic blackberries
handful of walnuts
1/2 cup of coconut flour
1/4 sorghum flour
1/2 cup almond meal
¼ cup of coconut oil
1 tsp vanilla powder
1.5 tsp of cinnamon
1 tsp cardamom
1 tsp nutmeg
1 tsp baking powder
1 tabs chia seeds
Pre heat oven to 180 degrees and line a loaf tin with baking paper.
Add banana, spices, eggs and coconut oil to high powered blender or food processor.
In a bowl add the flours and baking soda together, pouring in the mixture slowly whilst folding it through.
Once mixed well add in black berries and walnuts.
Put mixture into load tin, top with pepitas or coconut flakes
Place loaf on the bottom shelf of the oven. Cook for 45 minutes or until a skewer inserted comes out clean.
If browning too much add al foil to top for remainder of load cooks.
Once cook allow to cool slightly before removing from the tin, store in glass air tight container.
serve with fresh butter.
