Banana, Date & Walnut Muffins

Gluten-free and paleo friendly… the perfect healthy treat for you or your kids!


2 cups almond meal

2 tsp baking soda

3 organic eggs

2-3 ripe bananas

1 cup fresh dates, chopped (make sure they are pitted)

1/4 cup coconut oil, melted.

3/4 cup walnuts, chopped/crushed

pinch of sea salt

1 tbsp cinnamon

How to:

Preheat oven to 180.

In a large bowl, combine flour, baking soda, salt and cinnamon.

In a high speed blender or vitamix, combine dates, bananas, eggs and oil.

Add mixture from blender to dry mixture in the large bowl, combine thoroughly.

Fold in walnuts.

Divide mixture into muffin tin

Top with banana slices

Bake for approx 25 minutes.
