Carrot & Walnut (paleo) Muffins



A delicious and healthy paleo snack for on the go!

Ingredients

1 mashed banana

1/2 cup of coconut flour

3 organic eggs

1/2 cup of almond meal/flour or LSA

1/2 teaspoon baking powder

1 tsp cinnamon

1/4 tsp nutmeg

stevia or raw honey

drop of vanilla essence

1/2 cup of grated carrots

3/4 cup walnuts (roughly chopped)

1/2 cup of coconut oil (melted or just left on the bench if you’re in Australia right now)

coconut cream

Chia seeds or coconut flakes for topping

How to:

Preheat oven to 180C. Grease a muffin tin or cups with coconut oil

Add the sifted coconut flour, almond meal, baking powder, vanilla and spices to the banana mash. Then stir in the sweetener, half the walnuts.

Mix Eggs in separate bowl and add coconut oil, stir in the remaining walnuts and carrot.

Add coconut cream for extra moist. Coconut Flour absorbs everything.

Top with Chia Seeds or anything else you may like... you could use coconut flakes.

Bake for 15-20mins til golden brown!
