This year I had so much more time to get creative in the kitchen with Easter Treats so I came up with a few goodies
These are so easy to create and taste so yummy! Best part is they are so much better for you than your store bought easter eggs, especially when you put into consideration how many we tend to consume over the easter break.
Life is all about balance, so dont be afraid to treat yourself a little this weekend.
1 cup of Almond Meal
3 scoops cappuccino nuzest protein
¼ cup of cacao powder
4 fresh dates
1 tsp vanilla powder or essence water (to consistency)
Cacao + Coconut Oil + maple syrup
Outside of eggs (foil alternative)
Desiccated Coconut and Food Colours (you can purchase these or create your own very easily)
Blend all ingredients in high speed blender (vitamix) adding small amounts of water as you go. I wanted them to be more chewy than normal balls, so i only added small amount of water to mix as I went.
Roll into balls – put in freezer to harden
Create the chocolate coating; using 2 tabs coconut oil, 2 tabs cacao and 1 dessert spoon of maple syrup on the stove top until blended well. *alternatively you can use chocolate of choice and melt it down with other ingredients
Remove balls from freezer, coat balls in chocolate mix then sprinkle with pre prepared coloured desciated coconut.
To create colour coconut – put coconut in bowls and add colours from your mixes.
