Green (banana flour) Pancakes


Pancakes, who doesn’t love pancakes!

Im slightly addicted to these green ones. Does anyone else go through food addiction phases. This is the latest for me! 

You know the best part – they are so easy to create.

Using banana flour as a great gluten free alternative, yes its actually made from green unripened bananas. And being a resistant starch it isnt digested in the small intestine meaning so many wonderful health benefits like being a great source of prebiotics to help heal your gut and encourages the growth and activity of microorganisms to help your general well-being.

They aren’t overly sweet so feel free to add a small amount of maple syrup or your choice of sweetener if you require.

Once they are cooked I add a small amount of coconut oil to the top, coconut yoghurt, some fruit and home made  granola. 

They are definitely best served hot but  can be made into mini size for kids lunch boxes. 


Ingredients:

  • 1 large handful of baby spinach

  • 1/2 - 1 tsp of The Beauty Chef inner beauty greens powder

  • 2 tablespoons of Natural Evolution Banana Flour

  • 1/4 teaspoon of Arrowroot powder or can use GF baking powder

  • 1 egg

  • pinch of cinnamon

How to:

  1. Add all ingredients to small blender and blend till combine

  2. Pour into pan into 3 small circles

  3. Watch for little bubbles and then flip over

  4. Top with your favourite coconut yoghurt, granola or fruit

These don't take very long to cook and are so easy and simple to make. enjoy
