Who doesnt love a good guacamole?

Its an amazing side dish or topping for salads, nachos (check out my vegan nachos recipe) and many other dishes.

And when Avocados are so full of goodness, why wouldnt you!

They are rich in mono-unsaturated fats that have properties to protect against inflammation.

They’re loaded with the antioxidants lutein, vitamin E and beta-carotene and can support cardiovascular and digestive health. It will make your skin glow too.

Studies have also shown that eating healthy fats such as avocado with salads and vegetables can dramatically increase the amount of antioxidants you take in from the meal.


1-2 Organic Avocados (stone removed)

1/2 lemon or lime

1/2 mini fresh chilli

1/2 red capsicum or 3-4 cherry tomatoes

1 shallot or few chunks of red onion

Few coriander leaves

Pink Rock Salt

Olive Oil or Avocado oil - to reach desired consistency

How to:

  1. Using Food Processor or hand mix in all the ingredients. Can be left chunky or made smooth


I make my dips hours or a day before required as it seems to enhance flavours.
