It’s the week of the cookie in my house it seems.
These little FAT BOMBS are perfect for my keto, peanut butter loving, low carb friends.
BUT WAIT what’s different about these little guys is they’re no-bake recipe!
Not only does that mean you can literally spoon the dough straight into your mouth without a worry (shhhhh ) but it means you don’t have to make them, bake them and wait for them to cool down... ain’t nobody got time for that!
They’re super yummy healthy fat treat (if you love peanut butter)
These little cookies are :
vegan* if substitute the collagen for plant based protein
no added sugars
2/3 cup of almond flour
2 tsp of coconut sugar
2 spoonfuls of collagen** powder
3 tabs of coconut oil
2 tabs of peanut butter
1 tabs chia seeds
Almonds or whatever you prefer on top
How to :
Place all ingredients in the vitamix or food processor and pulse til combined.
Spoon int a bowl and place in fridge or freezer for about 10mins until it has set enough to handle.
Line a tray with baking paper, spoon about a teaspoon of the batter to make mini cookies onto the tray. Add nut to top and lightly press down with finger to flatten.
Place back in fridge or freezer to set and keep in an airtight container in fridge.
NOTE: Be careful not to leave out in between enjoying them, they can soften and melt.
