A healthy happy Halloween. I know we dont celebrate it much here in Australia, but to get into the spirit a little for my American friends! I created these yummy healthy alternative Halloween treats, if you feel like indulging.
I recommend making these the day before you want to enjoy them as the flavour seems to set in and be more amazing the following day.
1 cup of oats (pulse until smooth to form oat flour)
1/2 cup of pumpkin
6 fresh dates or you can use coconut sugar
2 tabs of maple syrup or rice malt syrup
2 scoops of vanilla protein powder of choice (i choose a plant based)
1 tsp of spice mix - all spice mixture, cinnamon, nutmeg, ginger and cloves)
1/2 tsp vanilla bean
Desiccated coconut to roll them in
In a high speed blender pulse oats til flour forms.
Mix dry ingredients with flour in a bowl (spices, protein powder)
Mix in wet ingredients, make sure to combine well
Should be a firm batter, add some water if need be.
Roll into small balls and coat with coconut
You can add in some nuts, cacao nibs, etc to make different and fun combos.
Store in the freezer if you make in bulk or fridge for up to a week
