Forget the unhealthy traditional rum balls – Why not create a yummy guilt-free alternative for Christmas and New Year!

I love the colours of Christmas – Reds, Greens, Whites so using Coconut, Gojis and Lime I recreated this!

Gluten Free, Dairy Free and Free from Refined Sugars


  • 1 ½ cups of almond meal

  • 1 ½ cups desiccated coconut

  • ½ cup of raw cashew nuts (soaked for 1 – 2 hours for softness)

  • ¼ cup of chia seeds

  • ½ cup of coconut oil

  • ½ cup maple syrup

  • ½ cup goji berries

  • ½ cup cranberries

  • ½ cup cacao nibs

  • zest of 2 limes (skin gives it zing)

  • juice of 1 lime….and yes you can add some sneaky rum to this recipe if you want to!

How to:

  1. Add almond meal, cashews, desiccated coconut, coconut oil, maple syrup, lime juice and zest to the food processor and blend until smooth.

  2. Add chia, gojis, cranberries and cacao nibs to the mix and pulse a few times to combine.

  3. Roll the into small balls and cover in desiccated coconut.

  4. I keep mine in the freezer, but for softer texture keep in fridge.
