Beetroots are packed with phytonutrients called betalains that provide antioxidant and anti-inflammatory support to the body.
They are also high in minerals such as calcium and magnesium.
Cleaning, detoxifying, liver cleansing and immune boosting.
Mint contains menthol, which is a natural decongestant that helps to break up phlegm and mucus.
Carrots are the richest source of beta-carotene, which converts to vitamin A in the body. Vitamin A is essential for tissue growth and repair and good thyroid function.
3 x carrots (baked)
2 x beetroots (baked)
1 x handful mint
1/2 garlic clove (baked)
2 tabs Olive Oil
1 tabs Balsamic Vinegar
Added Spices : Hot Paprika, Black Pepper, Turmeric, Cumin
Pink Rock Salt and pepper
Bake beetroots and carrots until soft. Oven temp 200C
Allow to cool from oven
Throw it all in the food processor, Some times I like it smooth, other times I leave it slightly chunky.
Top with some left over mint.
