ROASTED BEETS & CARROT WITH MINT DIP



Beetroots are packed with phytonutrients called betalains that provide antioxidant and anti-inflammatory support to the body.

They are also high in minerals such as calcium and magnesium.

Cleaning, detoxifying, liver cleansing and immune boosting.

Mint contains menthol, which is a natural decongestant that helps to break up phlegm and mucus.

Carrots are the richest source of beta-carotene, which converts to vitamin A in the body. Vitamin A is essential for tissue growth and repair and good thyroid function.

Ingredients:

  1. 3 x carrots (baked)

  2. 2 x beetroots (baked)

  3. 1 x handful mint

  4. 1/2 garlic clove (baked)

  5. 2 tabs Olive Oil

  6. 1 tabs Balsamic Vinegar

  7. Added Spices : Hot Paprika, Black Pepper, Turmeric, Cumin

  8. Pink Rock Salt and pepper

How to:

  1. Bake beetroots and carrots until soft. Oven temp 200C

  2. Allow to cool from oven

  3. Throw it all in the food processor, Some times I like it smooth, other times I leave it slightly chunky.

  4. Top with some left over mint.
