Sweet potatoes provide excellent nutritional benefits as well, since they contain antioxidant, anti-inflammatory, and disease-fighting components.
Most of these benefits are a result of the large amount of beta-carotene found in sweet potatoes, which helps ward off free radicals that cause chronic diseases. This important antioxidant also helps to support the immune system and reduce inflammation.
These little orange beauties are also a great source of healthy carbohydrates too.
2 large sweet potatoes
2 tbsp melted coconut oil
1/2 tsp pink salt
1/4 tsp garlic powder
1/8 tsp dried thyme
1/8 tsp dried rosemary
1/8 tsp fresh-ground pepper
1/8 tsp sweet paprika
1/8 tsp cayenne pepper
1/8 tsp cinnamon powder
Preheat oven to 200 degrees. Wash and dry sweet potatoes.
Leave skins on, and cut potatoes into bite-sized chunks.
In a large bowl, combine all ingredients, except the sweet potatoes.
Place sweet potatoes in the bowl (or bag with flavours) and toss well to coat.
Place on a large-rimmed baking sheet and bake for 20-25 minutes until lightly browned and cooked through.
