Sometimes I get a little crazy in the kitchen, this is where my creative side kicks in and takes over, sometimes it turns into a not so great disaster but other times I get a divine creations like this one!
Yum! The combo! Rocket, tomato and goji just seemed to work!
Rocket is rich in the B-complex group of vitamins such as thiamin, riboflavin, niacin, vitamin B-6 (pyridoxine), and pantothenic acid those are essential for optimum cellular enzymatic and metabolic functions.
Tomatoes are a great source of vitamin B6, C, K, beta-carotene, potassium and manganese.
I’ve used macadamia oil in this to add its natural anti-inflammatory properties along with giving the dip a wonderful mellow flavour.
2 large handfuls of rocket
3/4 tin of organic tomato
1/2 cup macadamias (can be pre soaked)
2 tabs macadamia oil
1/2 cup Goji Berries
4 fresh dates
sprinkle of hot chilli powder (to desired taste)
Squirt of lemon juice
Pink Rock Salt
Blend in Food processor and let sit in fridge.
