Vegan (cashew) Cheese

It seems that more often than not lately I am preferring to eat more of a plant based diet. So it made sense for me to jump on board with the cashew (vegan) version of cheese. 

It tastes amazing, its extremely versitile and so simple to create.

You can use it as a side sauce for Mexican food, as a dip to go with some carrots or even use it as a spread on a sandwhich or wrap.

Nutritional Yeast? What is that?

Its usually found in bulk food/health food stores, little yellow flakes. Commonly sold as 'Savoury Yeast Flakes'

Its naturaly gluten free and an amazing source of Vitamin B Complex and B12 when fortified. Its flavour quite often described as cheesy or chicken like. 


1.5 cups (soaked) Raw Cashews

1 Clove Garlic (crushed)

Juice of 1 Lemon

Dash of apple cider vinegar

Dash of white wine *optional

¼ tsp Sea Salt

Pinch of Black Pepper

Water to desired consistancy 

How to

Add all ingredients to Vitamix or high powered blender. 

Store in fridge before serving to create an amazing thicker and creamier texture.
